Message from Maggie:  This easy salmon marinade is in the cookbook my mother in law gave to me for our wedding. Its such an easy and delicious way to cook salmon that we rarely make salmon any other way.

Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup honey
  • 1/4 cup dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • pepper
  • 2 pounds fresh salmon
  • 1-2 scallions, chopped (optional)

Instructions:

  1. Mix together oil, honey, dijon, garlic, salt, and pepper.
  2. Slather onto salmon.
  3. Place in zip lock bag.
  4. Allow salmon to marinate in bag for 30 minutes to 2 hours in the refrigerator.
  5. Remove salmon from bag and place skin down on the aluminum foil.
  6. Sprinkle with scallions (optional).
  7. Place the salmon on the aluminum foil onto a hot grill.
  8. Cook on grill for about 10 minutes until edges are brown.
  9. Remove salmon and aluminum foil from grill and put on a plate.
  10. Remove salmon from aluminum foil, leaving skin on aluminum foil.
  11. Sprinkle with chopped scallions.
