Message from Maggie:

Unless you live under a rock you are probably aware that it’s inauguration in Washington, DC. Living in DC it may surprise you to learn I am not very political- and am certainly not going to start now on this happy little blog of mine.  That said inauguration is big deal for our country and for this city.   To commemorate the inauguration I created these cute little Capitol shaped hand pies.  In need of your own Capitol shaped cookie cutter? Ingredients:

Crust:

  • 1 package pie crust dough (2 rounds of dough)

Filling:

  • 2 cups cherries
  • 1/4 cup sugar
  • 2 Tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt

Top:

  • 1 whole egg
  • White sparkling sugar

Instructions:

  1. Take pie crusts out of refrigerator and let them come to room temperature.
  2. Preheat the oven to 350º.
  3. Combine all ingredients for the filling into a bowl and mix well until the berries start to juice.
  4. Sprinkle your working surface with plenty of flour.
  5. Cut dough into Capitol shapes using a capitol cookie cutter.
  6. Cut a heart in half of the Capitol shapes to create a vent.
  7. Spread whole Capitol shapes with about 1 1/2 T. cherry filling.
  8. Place heart cut out Capitol shape on top of Capitol shape covered in cherry filling.
  9. Using a fork, press down on edges pinching together top and bottom of each Capitol.
  10. Whip the egg and brush over the dough.
  11. Sprinkle dough with white sparking sugar.
  12. Bake for about 15 minutes, or until edges are browned.
