Maggie’s Menu: Roasted Broccoli

Message from Maggie:

One thing I think about regularly is that I tend to save posts only for my masterpieces.  Sometimes simple recipes you can make on a regular basis, like this roasted broccoli, are post-worthy too.

Ingredients:

  • 12 ounces fresh broccoli florets
  • 1 clove of garlic, peeled and thinly slices
  • Olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon grated lemon zest
  • 1 Tablespoon pine nuts, toasted

Instructions:

  1. Preheat oven to 425 degrees F.
  2. Place the florets on a sheet pan large enough to hold them in a single layer.
  3. Toss the garlic on the broccoli and drizzle lightly with olive oil.
  4. Sprinkle broccoli with salt and pepper.
  5. Roast for about 20 minutes until crisp-tender and the tips of some of the florets are brown.
  6. Remove the broccoli and toss with a little more olive oil, lemon zest, lemon juice, and pine nuts.
