Maggie’s Menu: Spicy Smoked Shrimp

Message from Maggie:

We aren’t shy about trying new things on the smoker, but hadn’t ventured into smoked fish.  Last night we tried smoked shrimp  using a favorite spicy recipe we usually do on the grill and really enjoyed the flavor.  This would be great paired with pasta, rice, risotto- or served as an appetizer with a dip.

Ingredients:

  • 2 large clove garlic
  • 2 teaspoons coarse salt
  • 1 teaspoon cayenne
  • 2 teaspoon paprika
  • 4 tablespoons olive oil
  • 4 teaspoons fresh-squeezed lemon juice
  • 1 pound shrimp, peeled, rinsed and dried
  • Lemon wedges

Instructions:

  1. Heat a electric smoker to 250 degrees.
  2. Skewer shrimp.
  3. Mince garlic with salt; mix with cayenne and paprika, then make into a paste with olive oil and lemon juice.
  4. Smear paste on both sides of skewered shrimp.
  5. Lay skewers on rack in the smoker.
  6. Smoke for 45 minutes.
  7. Serve immediately or at room temperature, with lemon wedges.

This recipe yields about 4-6 servings
