Maggie’s Menu: Twice Smoked Potatoes and a Christmas Dinner Recap

Message from Maggie:

We hosted Mr. Magpie’s family and a few dear neighbors on Christmas. Mr. Magpie kicked off the night with a large charcuterie plate before we sat down to dinner where the menu consisted of lamb, green beans, salad, and these twice smoked potatoes.

Ingredients:

  • 1 bag of yukon gold potatoes
  • 1 bag of cheddar cheese
  • Whole milk
  • Salt

Instructions:

  1. Clean potatoes and allow to dry.
  2. Rub potatoes in olive oil and sprinkle with salt.
  3. Place potatoes in electric smoker at 225 degrees for 2.5 hours or until tender and easily able to poke a fork in.
  4. Allow potatoes to cool a bit and cut in half lengthwise.
  5. Carefully scoop out most of the potato into a bowl. Take care to leave enough potato in the skin so the shells stay together.
  6. Mash potatoes and cheese together and add milk until a mashed potato like consistency is created.
  7. Season with salt and pepper.
  8. Refill the shells with the potato mixture mounding it slightly.
  9. Sprinkle with paprika.
  10. Place potatoes back in smoker for 45 minutes before serving.
