Message from Maggie:

My sweet coworker Lindsay’s birthday is today.  She loves dirt cake- you know the one with the gummy worms?  I made that version last year but decided to create a more sophisticated take for her big day using mason jars and fresh herbs.  Happy Birthday Lindsay!  

Ingredients:

  • 2 4 ounce boxes of instant chocolate pudding
  • 3 cups milk
  • 12 gluten free chocolate sandwich cookies, crushed
  • 8 sprigs of fresh mint, basil, or rosemary leaves
  • 4 mason jars

Instructions:

  1. In a large bowl add the milk and chocolate pudding mix.
  2. Stir to mix together for about 2 minutes until all the lumps are gone.
  3. In a quart ziploc baggie add the 12 cookies, seal, and smash with a rolling pin.
  4. Layer to fill ¼ of your mason jar with the chocolate pudding, sprinkle ⅛ of the crushed cookies on top.
  5. Add another 1″ of pudding or so (1/4 of the pudding for each pot), sprinkle another ⅛ of the crushed cookies (you want it to look like dirt on top).
  6. Repeat with the other 3 mason jars.
  7. Plant 2 sprigs of fresh herbs into each pot
  8. Serve

Herbs are nice touch and anything chocolate is delicious
