Message from Maggie:

Mr. Magpie is loving this prep bowl trend at our house.  Here is another take in the form of a mexican meal.

Ingredients:

  • 1/2 cup brown rice
  • 1 tablespoons olive oil
  • 1 pound 93/7 ground beef
  • 1 (1.25-ounce) package taco seasoning
  • 1/2 (15-ounce) can black beans, drained and rinsed
  • 1/2 cup whole kernel corn, drained
  • 20 cherry tomatoes, halved
  • 1 small avocado, cut into slices
  • 1/4 cup shredded cheddar cheese

Instructions:

  1. In a large saucepan boil 1 cups water, cook rice according to package instructions; set aside.
  2. In a small saucepan boil 1 cup water, and cook corn according to package instructions; set aside.
  3. Heat olive oil in a large pan and add ground beef and cook until beef has browned, making sure to crumble the beef as it cooks; stir in taco seasoning. Drain excess fat.
  4. Divide rice into bowls and top with ground beef mixture, black beans, corn, tomatoes, cheese, and avocado.
