Message from Maggie:

When shopping for more acai packets (see more on that here), I stumbled across pitaya/dragon fruit packets and decided to give them a whirl.

What is pitaya?

Pitaya, also known as dragon fruit, is a superfruit indigenous to Central and South America that is now grown all over the world.

What does pitaya taste like?

Pitaya, or dragon fruit, has a faint, sweet taste much like an earthy watermelon. All of its seeds give it the consistency of a kiwi.

What are the benefits of pitaya?

Pitaya, or dragon fruit, is rich in magnesium, is a good source of iron, high in fiber, rich in antioxdants and full of vitamin C.

Ingredients:

  • 1 packet of frozen pitaya/dragon fruit
  • 1 medium banana
  • 1/4 to 1/2 cup coconut water
  • 1/2 cup frozen pineapple
  • Toppings: 1/2 sliced banana, 2 tablespoons sliced almonds, 1 tablespoons shredded coconuts

Instructions:

  1. Combine dragon fruit, full banana, coconut water, and frozen pineapple in a blender.  Blend until smooth but not thin adding more coconut water if appropriate to get medium consistency.
  2. Pour into bowl.
  3. Cover with toppings.
